Sephra White Chocolate Melts are specially formulated for use in chocolate fountains and by confectioners who want a chocolate coating that will harden quickly when molding or dipping food items.
Sometimes referred to as a compound coating, the melts are made from similar ingredients as chocolate but contain more than 5% vegetable fat instead of the traditional cocoa butter.
Compound coatings are also made with cocoa powder instead of chocolate liquor.
Confectioners often prefer compound coating, which is very economical and does not require tempering unlike cocoa-butter-based chocolate products.
Also great for candy-making.
Contains 10 x 2lb microwave safe bags.
