If you ever need to whip up something delicious in a jiff – this is for you.

Yesterday I got a call from a friend I haven’t seen for months. She was in the area and was going to drop in for a quick cup of coffee. Well, you know how it is….you don’t want to just pour a naked cup a coffee, so not having any fabuous French pastries on hand (joke…) I wondered what to serve. I really needed something quick and tasty to go with my notoriously bad coffee. Yes, I make weak coffee and everybody complains. Knowing my coffee needed a companion, I rummaged through the pantry and found a box of lemon cake mix. I didn’t really have time to make a full blown cake with frosting, as she said she’d be here shortly but I remembered a quick cookie recipe I had heard of using cake mix and Sephra chocolate chips. Yep, it pays to have those on hand at all times. A staple in my house. You can NEVER go wrong adding Sephra chocolate.

These cookies turned out so well, and are so easy, I think they would make a great project next time the grandkids come over. They always need something to keep them busy and it’s always more rewarding when they can see and taste something they have baked! A very satisfying accomplishment for young 4 year olds—you know how proud they feel when they tell Mom “THEY” baked cookies. Anyhow, here’s the recipe.

– 1 box cake mix (actually any flavor will work)

– 2 eggs

– 3/4 cup vegetable oil

– Sephra Chocolate Chips

Mix the 3 ingredients well and add whatever flavor Sephra chocolate chips you have on hand. I added about a cup of Sephra Premium Dark chocolate chips to the lemon cake mix…um, um, tasty!

Grease or use baking spray on the cookie sheet. Bake at 375 degrees for 8-10 minutes. These were so pretty and fast. It looked like I had measured and tinkered for hours, when it reality it only took a few minutes. LOVE fast, easy recipes!
