Ruby Chocolate is a variety of chocolate originating from Belgium, introduced to market by Barry Callebaut in 2017 as the fourth type of chocolate joining dark, milk and white. This chocolate boasts a distinctive pink color. In Callebaut's own words: Ruby offers an intense sensorial delight, a totally new taste experience: neither bitter, milky or sweet, but a tension of fresh berry fruitiness and luscious smoothness. Regarding its composition, the ingredients are: Cocoa Butter, Cocoa Mass, Milk, Sugar, Citric Acid.
How is it Made?
Farmers in Ecuador, Ivory Coast, and Brazil grow the unique and rare ruby cocoa beans. Remember, chocolate doesn't spring directly from trees! These beans are processed to craft the final chocolate product.
In this case, It has citric acid added during this processing to unlock its unique flavor profile. Similar to adding lemon juice to a home-baking recipe.
Boasting an intense tangy flavor, it predominantly features red fruit and berry notes.
Is it Real Chocolate?
Yes! It is the fourth variety of chocolate, arriving 80 years after the introduction of white as the third type along with dark and milk. Additionally, no artificial colors or flavorings are added to this chocolate. Instead Its taste and color are completely natural and come purely from the processing of the cocoa beans.
