Sephra's Chocotemper Top-11 Tabletop Chocolate Tempering Machine melts the chocolate inside the 24lb / 11kg heated tank while the cooling of the chocolate takes place in the auger screw through the use of refrigerant gas. Sephra's Chocotemper Top-11 Tabletop Chocolate Tempering Machine is equipped with an electronic pedal to dispense the correct amount of chocolate into the molds and two separate engines for the tank and the auger conveyor, standby mode for keeping the chocolate melted through the night, auger conveyor release, reverse direction of the auger conveyor for optimal emptying of the machine, assisted shutdown in order to stop the Tabletop Tempering Machine correctly and the ability to save programs for each type of chocolate.

A: Estimated around 8.8lb / 4kg.
Q: How long does it take for the machine to go from Night Mode, to fully functioning Day Mode?
A: 20 minutes.
Q: Can the machine dose without using the foot pedal?
A: It is possible to set automatic dosing through the control panel. However the pedal is necessary to launch the first dosing. You can adjust the time, not the quantity, so the user has to find the time corresponding to the required quantity of chocolate.
Q: How is this machine cooled and are there any other utilities (besides electrical) that this machine requires?
A: No other utilities are necessary. The cooling is through refrigerant gas (copper tube around the auger).
Q: Is this machine able to be fully disassembled and cleaned?
A: Yes.
Q: Do I have to clean the machine before the first use?
A: No, the machine has been cleaned before shipment.
Q: Do I press the shutdown button at the end of each day?
A: Yes, you can use the shutdown button or Night Mode. The difference is Night Mode keeps the chocolate melted during the night (while the motors are switched off), whilst shutdown allows the chocolate to solidify. If on Night Mode, the day after just press Auto and the machine starts with the heating process for several minutes before automatically activating the motor.
Q: Do you have a video for a 2-4 day pause procedure?
A: For 2-4 days there is nothing special to do, you can just switch off the machine. For more days, we suggest removing most of the chocolate by placing a container under the nozzle while the machine is running.
Q: If I start the machine today on a Friday and have issues, is it okay for me to just press the shutdown button with the chocolate inside the machine and wait till Monday to resolve the issue with your support team?
A: Yes, you can.
