Sephra Chocolate Flavor Melts are specially formulated for use in chocolate fountains and by confectioners who want  a chocolate coating that will harden quickly when molding or dipping foods.

Sometimes referred to as a compound coating, Sephra melts are made from similar ingredients as chocolate but coatings contain more than 5% oil instead of the traditional cocoa butter. Compound coatings are made with cocoa powder instead of chocolate liquor.

Confectioners often prefer compound coating, which is very economical and does not require tempering unlike cocoa-butter-based chocolate products.

Ready right out of the bag, no oil or extra ingredients needed — 100% fountain ready. When removed from heat hardens quickly on coated items; no tempering required. Creates the perfect cascading effect in fountains and is as equally wonderful to use in the making your favorite chocolate bakes, pastries, desserts, candy-making or Peppermint Bark!

Storage: Store the product in a clean, dry (relative humidity max. 70%) and odorless environment, at temperatures between 12 - 20 °C / 53 - 68 °F.
