Popcorn Rocky Road

Popcorn Rocky Road

Rocky Road made with popcorn, chocolate, nuts and marshmallows

Although Rocky Road is thought to have been first created in Australia in the mid-19th century, it’s since become a dessert staple and party favorite of households across America and beyond.

There’s even a National Rocky Road Day every year in June!

It’s typically served as an ice cream in the USA, but the textured treat also works great as a no-bake dessert served slice by slice.

Here, we put a corny spin on a classic Rocky Road which is traditionally made from marshmallows, nuts and chocolate.

It’s one of our favorite popcorn recipes!

You will need:
  • Graham Crackers or equivalent
  • Chocolate (preferably dark)
  • Small marshmallows
  • Popcorn of your choice
  • Nuts – optional, although peanuts, hazelnuts and pistachios work well
  • Honey or golden syrup
  • Butter
To make:
  1. Melt the chocolate in the microwave or over a pan of boiling water
  2. Add the butter and honey and mix well
  3. Stir in the dry ingredients and mix until they are well coated with chocolate
  4. Pour into a tin or baking tray and leave to chill in the fridge for at least 4 hours.
  5. Remove and cut into portion-sized slices
  6. Enjoy!

Tip: This is a great way to use up leftover biscuits, nuts, and other ingredients.

Exact quantities don’t matter. You can mix it up however you like or just use whatever you have.

Why not get creative and make your own version? You could add chewy sweets, glace cherries, cranberries, raisins, coconut, or whatever you fancy!

Popcorn Trail Mix – one of the easiest popcorn recipes there is!

Shake up your trail mix by adding salted popcorn!

Just add it to all your favorite trail mix ingredients for a healthy snack that can be enjoyed at home, at work, or on-the-go.

We love dried apricots or pineapple, dried cranberries, cashews and sunflower seeds, but you can add whatever you like.

Most nuts and seeds (think pumpkin and chia) work well as do raisins, dates, chopped coconut, goji berries and dried banana or blueberries. And you can even add pretzels!
